Normalmente, quando não sei o que fazer para comer, faço caril. Isso não significa que menosprezo o caril, mas sim que o caril cai sempre bem. Especialmente esta receita! E tenho sempre todos os ingredientes necessários na despensa para esta receita, que é muito simples, totalmente adaptável (pode usar os legumes que quiser), rápida e mesmo muito boa. Perfeita para um jantar rápido e delicioso, em frente à lareira, com o cobertor sobre as pernas.
Receita para 2 pessoas

1 colher de sopa de caril em pó
1 colher de chá de pimentão-doce em pó
1 colher de chá de gengibre em pó
1 colher de chá de açafrão das índias em pó
1 pitada de cominhos em pó
1 dente de alho picado
1 cebola picada
1 lata pequena de tomate pelado ou 3 ou 4 tomates frescos bem maduros
Legumes à escolha (courgettes, ervilhas, grão-de-bico, brócolos, o que preferir), eu usei pimento vermelho, courgette e grão-de-bico cozido
1/2 lata de leite de coco
Verta um pouco de azeite ou de óleo numa panela. Adicione a cebola picada e o alho e deixe ganhar um pouco de cor. Junte as especiarias e deixe-as soltar os seus aromas deliciosos, mexendo sempre.
Adicione o pimento vermelho e deixe cozinhar um pouco (2 a 5mn), mexendo com frequência. Junte os tomates e deixe cozinhar tapado durante 15mn, ou até os pimentos estarem tenros. Junte as courgettes e o grão-de-bico, envolva, e cozinhe mais 10 a 15 mn, ou até as courgettes começarem a ficar tenras.
Por fim, deite o leite de coco até os legumes estarem cobertos, para ficar com muito molho. Muito molho é boooom!
Deixe cozinhar destapado durante 10 a 15 mn.
Sirva com arroz branco ou basmati, ou coma à colher da tigela (adivinhem quem é a lambona que gosta mesmo de comer da tigela com uma colher de sopa…).
  

Vegetable curry

Usually, when I don’t know what to cook, I make curry. It doesn’t mean I despise curry, it just means that curry always makes a wonderful meal. This recipe proves it! This is why I always keep all the ingredientes in my pantry for this recipe, which is so simple, totally adjustable (you can use the vegetables that you prefer), quick and oh, so good. It is certainly perfect for a quick and delicious dinner in front of the fireplace, with a blanket over your legs.

Recipe for 2

1 tablespoon of curry powder
1 teaspoon of ground paprika
1 teaspoon of ground ginger
1 teaspoon of tumeric
1 pinch of cumin
1 clove of garlic, chopped
1 onion chopped
1 can of tomatoes ou 3/5 fresh tomatoes
Vegetables (I used one zucchini, one red pepper and garbanzo beans)
Half of a can of coconut milk
Put the garlic and the onion in a pan, with a bit of oil or olive oil, and let it cook until the onion gets transparent. Add the spices and let them release their aroma, stirring.
Add the red pepper and let it cook for 2 to 5 minutes, stirring frequently. Add the tomatoes and let them cook with the lid on for 15 minutes, or until the red peppers are tender. Add the zucchini and the garbanzo beans, stirr, and let them cook 10 to 15 minutes, or until the zucchinis start to be tender.
Add the coconut milk so to leave the vegetables fully covered, thus ensuring that you will have lots of sauce, because lots of sauce is good!
Let it cook uncovered for 10 to 15 minutes.
Serve with white or basmati rice, or eat it straight away from a bowl (guess who loves to eat it from the bowl, with a big spoon? Me!).
